If you have the money there is no end to the amount of things you can do. You can take a private helicoper ride, plan a romantic weekend away at a spa or a house rental on the ocean where you can take romantic walks on the beach, if you are both into sports and are active you can go kayaking, play raquetball, golf on a nice course, take scuba diving lessons and go scuba diving, rock wall climbing and then actual mountain climbing, going to a concert in a limo, walking through museums, taking oil painting lessons, taking a cooking class together and then making a romantic dinner for her, lot of things.

Walking on the water front/board walk or a picnic at a lake or beach.

^^Let me add some to the awesome list above....
Laser tag or paint ball
Downtown Memphis, TN has many activities for downtown, ie: wine and art on the last Friday of every month.
Walk on the river/beach
drive & explore a nearby city.

Of course these things everyone is suggesting are great ideas, but it does depend on if it's the first date or 8th. Stick with simple and not overly priced on the first couple dates(you want her to like you for who you are, not the $$ you spend or being materialistic), this gives you something to build toward, nicer, finer things that may be higher dollar!!

Good Luck!!

Choose wisely. My husband took me flying on our first date (he was the pilot)
We've been together since that night! We had many nights of flying to another town to go to dinner. Made a great impression!

Not sure what the OP's idea of EXCITING (in bold) is. Walks on the beach and exploring neighborhoods may not do it for him.

Hang gliding? Roller skating in the park? Renting a tandem bike and going for a ride and picnic? It's hard to beat the hot air balloon and private plane flying suggestions.
