Some people fall into things immediately. Some take months or even years. It all depends on the people involved. Just go with the flow. What works for other people might not be the right thing for you.
If you aren't committed to someone, I think dating multiple people can be ok, but be honest about it.
I believe if no intimate encounters happens after a month or so the chances of it ever happening drop exponentially. A committed relationship I'd give several months. Of course there are exceptions and different circumstances.

I dated a lady for a little over a month with no real intimate physical affection besides greeting/leaving hugs. Interest fizzled out and I lost interest.
So just go with the flow and see where things lead. If there is no real physical affection being shown after a couple dates there is nothing there IMO.
