Now today I'm in a really good mood and its great. I was thinking of sending her a text "I'm in a really good mood today for some reason" as kind of a joking/playful way to express the truth. I'm overthinking this, but this wouldn't sound too cheesy or anything would it?

Yeah, I think it would definitely be cheesy. Unless she messages you first. Try not to use the phone to text so much before your next date. Don't get to know her over the phone.
A lot of guys do this and then wonder how 1, 2 or 3 really good dates turns into ''Yeah, I just need to work on myself'' or ''Yeah, I'm not looking for more than friends right now'' in a matter of days.

That wording can be taken as a sleazy play. I’d tame it down and say something to the tune of “I had an absolutely dope time and you are dope too.”

No, not if you think the feelings are mutual. If so, a little flirting is fine, but please don't get sexual with it or you might ruin things. You'll know when it's time to change tunes.
