Other than the bible, what indications or even better, proof do you have that an anthropomorphic entity that is omnipotent, and actually personally cares about each and every man, woman and child exists?

It depends on what they are educated in and how they were educated. Many people are highly educated but in a very narrow field.
But in answer to both questions, we can speculate but only the individual involved can explain their reasoning.

So where is the evidence, outside of the bible, of:
  • The creation story
  • Adam and Eve
  • A world wide flood occured - to the level of 29,000 feet
  • That Jesus really existed
  • That zombies walked around Jerusalem at the ascension?
  • Those are just starters.
