A few years ago, I bought a water-proof mattress pad to protect bedding from our ancient cats’ mishaps. Worked great, I purchased one size larger than the bed so it protected the sides too. Much easier to strip and launder than loads of bedding. One of the cats is now 18 so the pad is back in service, just in case.
It is definitely not normal for a cat to pee/poop in the sink or on the bed. I strongly urge you to take your cat to the vet. When cats avoid using the litter box it’s usually because it’s painful to urinate or defecate and they then associate the pain with the litter box. They will use a sink because they like the cold, smooth surface. She could have a UTI. And when they poop in your bed, they are trying to get your attention. The bed smells like you so that’s where they will sound the alarm.
I’m sorry for your medical problems but you definitely need to address the needs of your cat who is entirely dependent on you.

Reason: Grammar/punctuation
You have objections to all the alternatives proposed by the very kind and nice people on this thread.
So now it's either you or your cat.
What do you propose?
I have no idea...hopefully not finding myself in a situation where I would have to make a decision to leave my cat to starve because I was rushed to the Hospital and nobody knew.
Depression/Inertia/chronic illnesses....what a bad combination to live through..
The easiest one would be to die..
Sorry to sound so dramatic...Maybe the mods should shut down this thread...it's getting too depressing...and maybe it should go in the Mental Health Forum.
Thank you for all that contributed their input.
