With St. Patty's Day right around the corner, I see that our local Wegmans is stocking "uncured" corned beef again. I tried it last year and it was awful and even the corned beef hash I made from it was awful.


I just bought a nice fatty "cured" corned beef "point" from Aldi's for $1.99/ lb. When I cook it up, it'll be good eating!


Has Danny lost his mind with this "uncured" nonsense?

What do you mean by uncured, just raw brisket or something else?

Heading there tomorrow to get mine. Love their uncured corned beef! Nitrates and nitrites cause cancer, so no thanks. Cooking it in an instant pot makes it nice and tender. I have a 2nd instant pot to cook my cabbage and carrots!

"Uncured" means that the meat has not been treated with sodium nitrite. That substance eliminates bacteria and toxins and the gamy or putrid tastes present in cheaper meats like the bull, boar and old dairy cow meat used to make hot dogs and lunch meats. It also preserves the red color in corned beef and hams.


Uncured meats contain extra amounts of salt, smoke flavoring and spices to mask the nasty tastes.

I've never had a problem or "nasty taste" with those uncured corned beef packages that Wegmans sells. We don't even use a crock pot/braise most of the time, just roast them right in the oven until they're tender, they get a way better crust on the outside that way.
