They look nice when packed in clear cartons to sell at the farmers market and often bring a $ a dozen premium. The best market will be hatching eggs for this breed.
We like eggs, but we eat maybe 10 a week at most. I guess we'll have to up our game. We have a lot of friends and neighbors queued up to receive free eggs, though. Would be great to sell some but I don't know how to even do that yet!

Profit was also a much required thing. Started hens are worth a lot more than most all other laying breeds.

Be careful selling eggs for human consumption. There are strict rules and regulations governing egg sales in most places. There are legal work arounds but they must be met.

Where we are at just about 20% of the side roads have an honor system egg stand.
They sell a dozen for about 5 bucks.
One has a warning sign saying you are on camera.

Before mine stopped laying I used to give them away.
I would like to learn how to pickle them.
It would be cool to have some for emergencies.

Homesteading Family channel on Youtube has a tutorial on egg glassing which I guess is same as pickling.

I watched it a year or two ago, and just filed it away as "hm, interesting, don't know if I'll ever need to use this". Then we got chickens and are hoping/expecting to get 2-3 dozen eggs a week starting some time in the spring, God willing and the creek don't rise! Some of them will probably be going into jars at some point.
