I’m moving from DFW Texas to Salt Lake City and plan on driving a rented box truck while towing my car behind me, what is the best route to take for this? I’m wanting to avoid mountains as much as possible just for the safety aspect.

well there goes highway 6 that is the most direct route... you can take I70 to I15 once in Utah.

I do not see why first going to Albuquerque (via Amarillo) and then Salt Lake City would not be a good road to take?

Avoid mtns will involve some two-lane, not all Interstate. Go to I-40 however you like, probably angle up via Childress to
Amarillo is shortest. I-40 west to Gallup NM. 4 miles north of Gallup on 491, then west on 264 (these are mostly 4-lane)
264 going into AZ, at Ganado AZ turn north on Hwy 191. Stay on 191 up through Moab and on to I-70. (trucks take this route to avoid steeper mtn alternatives) There will be some climbing as you go west on I-70 through the San Rafael Swell but it is gradual and easier than taking Hwy 6. At Salina, UT take Hwy 50 shortcut up to Scipio and I-15, then just stay on I-15 into SLC.

This is the best route to take. I am from Utah and live in DFW and have made this move with movie g truck and trailer 2x...Lol Go Amarillo, Albuquerque, through Moab up to Salt Lake. It's flat, the roads are great and Southern Utah is scenic. It's mostly interstate or divided highway.

I70 is mountainous

Somewhere above, Highway 6 was mentioned.

As long as you drive it during daylight hours, there should be no problem.

The "steep" parts are all two lanes when you go "up".
The "down" ones are single lane.
Plenty of sections for slow traffic (passing lanes).
