For reasons I’m embarrassed to go into, we have displaced ourselves from our home in SLC and trying to find a newer home to purchase within 30 min or less of downtown. We are not LDS and our 3 younger kids will likely have to attend public school. I’m super concerned about planting them in a 95% LDS community for many reasons, but on the other hand we are at this point down to very few options and the housing market is absolutely horrible especially if you don’t want a 1940s-1980s all original. starting to look into farther south (sun crest or south Draper) or north (Farmington?) ....any thoughts on either of these? Air quality is another concern, outside of schools, especially in the north near refinery but not sure how far away you need to be to get away from that.

They are pretty similar. I have relatives in Farmington. I think it's a lovely area, the refinery and bottleneck traffic aside. I think Suncrest and Draper will have more transplants due to the proximity of multinational job centers. But, that's instinctual rather than factual.
