I need to dump things from my garage. Who can I call and pay to pick up garbage? Really garbage, trash, boxes, etc. All junk that needs to be dumped.

You might try Craigslist. Lots of folks that advertise they'll do it for free - likely to try to see what they can recycle, but hey - it helps BOTH of ya'll out that way!

If you can't find anyone on craigslist, you can try here: Junk Removal | Hauling 1-800-GOT-JUNK? Trash Waste Garbage Rubbish Removal
Not sure if they have someone near you, you'll need to enter your ZIP to get result whether or not there's a truck in your area.

Converse has free bulk trash pickup by appointment once per month, but you have just missed it for this month as the deadline was noon yesterday.

If you call 210-658-1965 they will add you to the list of addresses for bulk pickup. You have to call in by noon of the Friday preceding the 3rd Monday of the month.
