Are there any meat markets - or meat departments at grocery stores - that take custom requests for things like low sodium sausage?

Your best bet for custom sausage making is to use the suggestions outside of San Antonio that some already made above. Those guys make sausage quite a bit for all the hunters.

My father used Dzuik's year after year for all of his deer meat processing, some of which was made into sausage. They do custom mix based on the customer's choice, or at least they did.

There was another meat market in Castroville but it doesn't appear to be around anymore. Dan's Meat Market. That one was a favorite of my grandfather.

There is also Wiatrek's Meat Market at Blanco & West Ave. I have seen it recommended on Nextdoor.

lol. Where did I say that? You need to brush up on your reading comprehension sir. I did not say the meat markets in the city "cannot" make sausage.

I just suggested the meat markets that deal with high volume game processing probably are better at handling all kind of special requests in regards to sausage making, the ones outside of the city in the smaller towns nearby.

You seriously need to calm down. It is Friday. If you want to continue this debate, take it to DM. Your nitpicking here doesn't help the OP.
