I will be a student at Uni next year in the city and after hearing about all the unemployment issues the Bay Area is facing, my question is: would it be hard to at least find a job in retail, like at Banana Republic for example? (I have been working there for a year, as well as other stores). Or in a mall (Zara, Mango, H&M, etc.). If push comes to shove, I could also do waiting.

My plan is to work part-time at a job like that and then take an internship on the side to build my resume. But will this be impossible to find even in this job climate?

Banana Republic and Zara for example are higher end stores, which will be more difficult. I know there are opportunities at stores such as Quicksilver, Hollister, Abercrombie (not specifically these, but on the same level) because I have friends working at those stores in Union Square. You shouldn't have any problem finding an entry-level job in retail, I just don't know about at designer stores. I had two friends who worked at Armani Exchange, but they really looked the part and could afford their clothes.
