I am trying to imagine Seattle as a "maximum city," and am wondering if someone out there who is good with maps could give me an idea of what Seattle's boundaries would be if it were 500 sq miles in size, expanded from its current boundaries of 83.9 sq miles?

I'm confused. Seattle as a City already has specific boundaries which create the "City Limits" and aren't going to be able to really change. Are you asking if Seattle were to absorb all of the surrounding cities or are you talking about Seattle as in the MSA?

It's quite likely that no one here is interested in creating, or even imagining, a "maximum city" concept. I recommend you try a different place.
