Roast beef. I admit to being a PBS geek. Everything I learned about cooking came from America's Test Kitchen. They had a show a while back about turning a cheap, flavorless cut like eye round into a tender, mouth-watering roast. I tried it... wow, that's good! The trick is salting it for 24 hours, then cooking it low and slow.
Sweet potato fries and little grape tomatoes to go with.
