If the person doing the BBQ knows what he is doing, the smoked meat should be able to stand alone without any sauce (sweet or otherwise). Texas is about the only state I know of where there are several upon several establishments where the meat is so good that you do not need sauce. However, if it is your style, there are also several fine sauces here in Texas too. IMHO if you NEED sauce, then there might be something bad about the meat. By that criterion, Kansas BBQ is definitely inferior to Texas BBQ.
