LOL I voted for all of them except ham, sliced pork and mutton (sorry, can't see mutton in any form, much less bar-b-que!) and I've never had bar-b-qued sliced pork or ham. At the top of the list of favorites I'd say sliced brisket and babyback ribs. Then it filters on down to chopped brisket, pulled pork, then sausage or chicken.

Do you mean I have to request it before I get there? It wouldn't be overnight then would it? Cabrito or mutton made this way would be my idea of camping BBQ heaven. I'd only have to take the greens to go with it!

I used to special-order it from HEB in Midland. I had to call ahead and see when/if they were going to deliver. I imagine some of the HEBs in Austin do the same.

I'm going to Corpus Christi next week. I'd sure appreciate being directed to the best BBQ in town. I haven't tried Mutton, and I'm not going to, but any other kind of meat that's BBQ'd, bring it on. My wife & I have several grills we use for cooking & smoking meat, gas, charcoal, & pellet. She uses a nat'l gas Webber grill almost every night for whatever kind of meat we are having. We use a Treager pellet grill/smoker for doing large roasts and whole smoked turkeys. Haven't tried doing a whole pig yet, but that is possible on the grill/smoker we have. Our three largest grills are always a pleasure to use and in the summer, we use 'em lots.

Beef brisket sliced or chopped, but sliced is better when reheated in a microwave after refrigeration.

Give the people at the SALT LICK a call. They specialize in their "variety" of meats on their menu. I don't know about cabrito, but they might be able to give you a clue of where to go if they don't serve it.

Alternatively, take a weekend trip to Monterrey, MX. It's one of the regional dishes for that area. Likely some places in the Laredo/Nuevo Laredo area have it on their menus too.
