I'm wondering if most airlines will let you take legal sports supplements on the plane with you, even if it has to go into checked baggage. I've travelled air, but this is my first year travelling for soley athletics, but I've had them take my toothpaste before, so I don't want to get to the airport and have them take stuff that's worth a lot more. It would only be two bottles of capsules, 2 containers of powder and one of gel. I have an ultramarathon in California in August where proper supplementation will be essential.

Airlines don't care what you bring on board. It's the TSA at the security check points. The gel will be a problem for a carry on. All you have to do is put everything in your checked luggage.
Your toothpaste was probably taken off you for being a "liquid" which exceeded the max amount. So the gel will be a problem but the rest should be fine. Is there a reason you can't put the gel in your checked luggage? There won't be a problem with it there.
Airlines could care less, security is the ones who you deal with. Each country has websites about their airport security and what is and isn't allowed. Within or from the US, TSA controls security. You can always place those items in an approved package and ship it via priority mail to your hotel or where your staying. Or just put it in your checkin luggage. If you do that, make sure it's properly labeled or still in its original container so they know what it is if your bag is chossen for additional screening.
