There's really nowhere in Europe that's intrinsically unsafe for a solo woman.
Both men and women need to take the same precautions--be careful of your personal belongings (i.e., don't hang your purse on the back of your chair in a cafe), be careful how much you drink, don't walk down dark alleys.....but basically the same stuff you need to think about it any American city, too.

Now if I can just find a good deal on a flight to London, that would be great. I'm looking to leave mid-July but I won't be able to book the flight until sometime in February.

That's OK, I've found that the best time to buy international air fare is 2-3 months before your travel date--unless there is some huge event like the Olympics going on of course.
As far as flights go, this is what I was thinking
Book round trip flight from Boston to London Gatwick
Use Easyjet to book one way flight from Gatwick to where my friend Is in Germany
Hang out with friend in Germany for a few days
From Germany fly one way to Rome and stay there for a few days
Then fly one way from Rome back to Gatwick to catch flight back to Boston. Thoughts on this plan?
Why not just book BOS>LGW then FCO>BOS? It's called an open-jaw and you can do that with little to no additional cost. It seems a better option--one less plane ticket and less chance of a missed connection.
Are you planning to spend time in London? If so LHR might be a better option as you can save a lot of money by using the tube instead of the expensive express train from LGW. I can't recall the exact difference, but it's $50 or so each way.

Yes, I do plan to spend time in London which is why I was planning to fly to Gatwick. Because I'm using EasyJet airline to fly within Europe, it's easier for me to just fly into Gatwick as EasyJet doesn't fly into Heathrow. I would love to fly into Heathrow because of the location but I would still have to get to Gatwick for my other flight.

You are booking a single r/t ticket to and from the US, it's called an open jaw. The price difference is less than an EasyJet ticket from Rome to London. Trust me on this, I do it often.
Book BOS>LHR then FCO>BOS for the return on the same ticket.
Fly into LHR, spend your time in London, then fly LGW to Germany, then Germany to FCO. Once you get to FCO, use the Leonardo Express to Termini, very pleasant.
Ohhh! Sorry. It took me a while to wrap my head around what you were trying to say as I've never heard of "open jaw" travel. How do I book that online?
