Yes, many deals made on the show are cancelled after as the sharks go through all the financials and everything else about the business. All deals you see are contingent on the sharks testing the product and going through personal and business financials after the show is filmed. So yes, the sharks can later back out. For example, Mr. Wonderful says usually only about a third of the deals he makes actually get finalized. And yes, everyone going on the show is aware of this beforehand.
