I say that as someone who greatly enjoyed Game of Thrones and the Marvel Cinematic Universe.
I think it is a shame that the talents of the people who gave us shows and movies like "Band of Brothers", "The Pacific", "From the Earth to the Moon", and "Apollo 13" were not utilized during the 2012-2018 time period.
If the 2010s had been more optimistic would we have shows that celebrated our WW2 victories and imagined a humanity having a optimistic future in space rather than dystopian shows?

Problem is, BOB and TPac were true stories and many of the 'players' were still alive and well documented.
Its easier to recreate from reality, than fantasy. In the air, long before the prevalence of gun cameras, every move of action can be recreated. most of the air battles were 'x went up, y came back, who is not back?' Even in top gun, most of the aircraft were toys.
.I always thought it was shocking that we had a show like "Hogan's
Heroes" which portrayed Nazis as loveable buffoons.
Here's a funny true story....when I was a kid, I loved Hogan's Heroes....
we had our new neighbors over for Christmas ....they were from Germany and
they said that they hated Hogan's Heroes and that it should never have been allowed on TV,
my parents agreeing....
I was supposed to have been asleep in my room but I darted out and stated "I love that show",
my parents suddenly turning red, embarrassed.
A bit of trivia......all the actors playing Nazis on the show were jewish!
I have the complete series on DVD ....and I still think it's a good show.
Band of Brothers and The Pacific, to a lesser degree, had phenomenal source material. Band of Brothers had the single book on which it was based and the direct primary sources of the veterans featured in the series. Masters of the Air appears to have good source material as well. As for the time between these series, they're all coming from the Spielberg/Hanks production tree. People move on to other projects and don't necessarily want to get pinned to the same genre all the time. It's probably the same reason why Spielberg hasn't directed a WW2 film after releasing what you could argue are two of the best (or at least well known) about the conflict in a 5 year run.

To be fair the show mostly had Germans like the guards of Stalag 17 and The Great Escape and not the SS. Although I do remember a Gestapo reoccurring character

Two points:
1. Keep in mind that not all Germans --- not even all German soldiers --- were "Nazis." Many were. But there were Germans (even officers) who loved Germany but hated Hitler and the Nazis.
2. Of the Germans on the show, the only one I'd even come close to calling "lovable" was Schultz. The rest were definitely buffoons, and I'm okay with that. In fact, I hope that is the ultimate legacy of Hitler and the Nazis: the butts of all our jokes. This actually came up as an issue with Mel Brooks years ago.
