Guam in my opinion has more influence from The Philippines such as in it's island dishes like Kelaguen(Kilawin),Pancit,Lumpia,Pork Adobo,Siopao,and some Filipino Loan Words are in The Chamorro Language,but sometimes pronounced differently.
Both islands were also once part of The Spanish East Indies,and also Guam is closer in distance to The Philippines,which is why there is much more Filipino Influence in Guam.
Hawaii seems to have more of a Japanese(East Asian) influence from what it seems like.
Guam, hands down. While both have a substantial Filipino population, their influence is seen more on Guam than in Hawaii. When you factor in that many Chamorro people are of Filipino descent themselves (with Chamorro being the largest ethnic group on Guam), it's not difficult to see why the culture's influence is felt more on Guam vice Hawaii. Hawaii, as Californiaguy2007 notes, has more of an East Asian influence, which makes sense when folks start to look into people's ancestry. Japanese Americans have a large presence in the state, as do Chinese Americans and folks of mixed Japanese and/or Chinese descent.
As a barometer of these things, I often look at the culinary scene of particular cultures, both in terms of authenticity and general availability. While not a perfect indicator always, I've found that it is often a pretty good one. Filipinos hold their own in many ways in Hawaii (and, to be clear, Filipino culture is a big thing in Hawaii), but other cultures are way better represented.
