I suspect the answer is fairly simple: Writers are taught to write what they know. The overwhelming majority of TV writers are white folks, so they write from that point of view. Times are changing, but they are still in the majority.
How would you know if a person was Sikh, Muslim or Hindu unless they said so? Those are religions not races or colors. Us Muslims come in every color.
