I'm still new to all of this and I need all the ideas I can get, and if you have kids even better! Mine don't want to make the switch yet but that doesn't mean I won't be making more veggie dishes for their dinner during the week. What do you eat for breakfast, lunch and dinner?

Breakfast: Tofu and an orange, or orange juice.

Midday snack: soy yogurt

Lunch: 1/2 c. brown rice, 1/2 cup beans, 2.5 cups raw veggie assortment

Midafternoon snack: apple

Dinner: Amy's vegan soup, or a baked potato (or yam), with a large garden salad drizzled with flax seed oil, organic apple cider vinegar, and herbs.

Evening snack: 1/2 cup bran cereal with 1/4 cup granola with 1 cup soy milk

Breakfast: oatmeal with flaxseed meal, walnuts almonds & raisins

Lunch: Leftover dinners or veggie burgers on whole wheat buns

Dinners:
roasted root vegetables (yams, carrots, onions, garlic, potatoes), fried tofu
polenta with tomato vegetable sauce (tomatoes, garlic, peppers, onion)
vegetarian chili (beans, tomatoes, TVP) & tossed salad
bean burritos, avocados & tossed salad
barley vegetable soup
lentil vegetable soup
split pea soup & tossed salad

Some typical choices at our house (these are all vegan):

Breakfast:
-Pancakes or French toast w/ VT maple syrup or berries and vanilla cashew cream.
-Pumpkin waffles w/ berries.
-Irish oatmeal w/ flax seeds, toasted almonds, berries and vanilla almond milk.
-Spiced rice pudding.
-Scones.

Lunch:
-Miso vegetable soup w/ brown rice.
-Baked macaroni and "cheese".
-Veggie sandwiches (my favorite is sprouted wheat bread, roasted red pepper hummus, spring greens, tomato, red onion, cucumber, sliced shiitakes, broccoli sprouts and avocado).
-Black bean burritos.
-Mochi pizza pockets.
-Quinoa w/ seasoned tomatoes and black beans.

Dinner:
-Celtic shepherds pie.
-Vegetable coconut curry over black rice.
-Veggie stir fry.
-Penne w/ mushroom alfredo.
-Seasoned roasted root vegetables.
-Lots of different salads and soups.

Snacks:
-Baked seasoned chickpeas.
-Chips & hummus.
-Soy yogurt w/ fresh fruit.
-Popcorn w/ nutritional yeast, chili powder & a little sea salt.
-Lots of fruits, nuts & veggies.

Desert:
-Peaches w/ cinnamon.
-Mixed berries w/ lemon cashew cream.
-Chocolate cream pie.
-Various fruit pies.
-Chocolate cake.
-Carob chip cookies.

Breakfast:
Oatmeal with brown sugar, Rice Krispies, pancakes, bagel w/peanut butter or Earth Balance, homemade muffins, homemade tarts
Lunch:
Hot roasted pepper and tomato sandwich with pesto, macaroni salad with oil & vinegar +mushrooms and peppers, vegetarian vegetable soup, veggie burger w/ soy Mayo on vegetable bread, cucumber sandwich with soy Mayo or Earth Balance
Dinner:
Vegan mac & "cheez" (I use this recipe once a week: Best Vegan Mac and Cheese in the entire world...seriously), burrito with beans or soy crumbles + green Chile sauce, roasted red potatoes with rosemary & thyme, asparagus & corn sauteed in Earth Balance, fruit salad, pizza with soy or nutritional yeast "cheez"
Dessert:
Coconut-based ice cream, pumpkin pie with coconut cream (whipped), Chocolate chip cookies (vegan chocolate drops are sold at Whole Foods), pizza dough baked with sugar and cinnamon, lace cookies

I cook vegan for one family member about one day a week. So maybe this will help a little. Last week:

Breakfast: hot oatmeal with ripe bananas stirred in, strawberry, apple and grape fruit bowl.
Lunch: roasted vegetable sandwich: peppers, onions, garlic, tomatoes on bakery flat bread.
Dinner: roasted vegetable lasagna with corn tortilla "noodles" same roasted veges above, tofu sausage, bean puree, and canned organic spagetti sauce.

home fries
homemade or gimme lean fake breakfast sausage
breakfast burritos containing the 3 things above
pancakes, french toast, waffles
biscuits with miso gravy

lunch & dinner:
polenta with roasted vegetables
lots of indian food: channa masala, potato & eggplant curry, spicy rice pilaf, various kinds of lentils, etc etc
stir fries with tofu, seitan or tempeh
red curry chickpea cakes with pickled vegetables
fancy ramen with braised greens, pickled vegetables, tofu, mushrooms
various soups
rice & beans
lasagna
shepherd's pie
burritos (rice, beans, salsa & vegetables)
tempeh "notso bucco" with saffron risotto

desserts:
basically whatever i want in terms of homemade baked goods
sorbet
nondairy ice cream

snacks:
vegetables with hummus
chips & salsa
sesame sticks
asian rice cracker mix
fruit
peanut butter crackers
wheat thins with maple butter

i don't think i've even come close to listing everything - i have a lot of standbys that i know by heart but i also use cookbooks a LOT. i just page through them, plan out a menu for the week and shop for that, or look up an ingredient i have on hand and see what strikes me. in those cases, if i can't find something in a cookbook, i look on the internet.

the cookbooks i use the most are:
anything by isa moskowitz and/or terry romero (*excellent* baked goods recipes!)
julie sahni's indian cookbooks
madhur jaffrey's indian and vegetarian cookbooks
yellow rose recipes by joanna vaught
the candle cafe cookbook
and i haven't bought the cookbook yet but i love the recipes from the vegan yum yum blog, which unfortunately seems to be down right now. but based on the blog alone, i'd recommend the cookbook.

Breakfast- Irish Oatmeal with soy milk
half a cup blueberries
breakfast tea

Lunch - tofu eggless salad with lettuce and tomato on herb rye bread
apple

Dinner Pasta Primavera
Whole wheat pasta - topped with veggies - peppers, onions, diced tomatoes and
mushrooms sauteed in olive oil
cubed tofu sauteed in olive oil and garlic.
Snack fresh fruit of my choice
or a Tofutti bar

Hummus
crackers
veggie sticks
salsa
a good corn tortilla chip
Daiya shredded cheese
Amy's soup
Goya Black bean soup - easy dinner - open can of soup, mix with 1 can drained black beans, chopped onions, carrots and celery - I get it pre chopped - serve over brown rice, with a salad and a crusty artisan bread - yum!
rice
chick peas
Tofurkey sliced turkey for sandwiches
potatoes and yams
lentils

you can do so much with these items!
