I like to marinate tofu in a sauce made from lime juice, a good quality soy sauce, ginger, cumin, basil (or cilantro) parsley, a few drops of hot sauce and flaked pepper.
Then I grill or saute until crisp.
This isn't exactly a sauce, but I make a tofu salad (similar to an egg salad) with Veganaise (vegan mayo) turmeric, a little paprika, (Hungarian is the best) a dash of lemon juice and some sea salt and cracked black pepper.
Great on a crisp slice of toast with a thin slice of tomato and red onion!
There are many other flavorings and sauces that I like, but these two ways of preparing tofu have been favorites of mine since the late 80s.
One of our favorites is tofu fajitas, so easy to make.
Saute green peppers, onions & chunks of tofu. We prefer nigari tofu that is sealed, rather than in water tub, as it fries crisp. Serve in warmed tortillas with your favorite salsa as a sauce.
On steamed tofu, I like a very simple sauce of tamari, maple syrup, garlic and sesame oil. In a stir-fry a tasty and very easy sweet/tangy/spicy sauce can be made by blending ketchup, sriracha, garlic, apple cider vinegar, ginger, a little sweetener (what I use depends on what I have) and water. I use homemade ketchup and I think store bought tends to be very sweet, so you might not need a sweetener if you use that. It depends on your tastes.
What the others have mentioned sounds pretty good. We do a hot and smoky tofu with hot sauce, vinegar, and some other spices. What you really want to try though is tempeh. The idea is that it's better for you than tofu because it's fermented. You can do very similar things with it. We grill it in an iron pan with a white wine + hot sauce conglomeration. So yummy!
Tempeh also makes good sandwiches. Use it as your base and then build around it. Other substitutes could be battered eggplant or large portabella caps.
