...I wonder why so many veg*ns seem to subsist so heavily on highly-processed foods like Tofurkey, or prefab frozen meals like the one made by Amy's.

Is it that people feel they have to have something meatish-looking on their plates to feel they are eating a meal? Is that why the Tofurkey?

Is convenience more important than price? Is that why all the frozen Amy's pizzas?

Or do people simply not know what to do with a rutabaga, a head of cabbage or a sack of apples? Is it a cooking-skills deficit?

Just wondering...

Do they?

I doubt vegans and vegetarians consume any more processed foods that the average omnivorous American. In fact my guess is that they probably consume less of them.

I'm not sure on the statistics but I would assume that new converts believe that it's impossible to be satisfied and receive ample nutrition based on a diet of fruits, veggies, and legumes. I think the meat supplements make many converts feel comfortable they are eating the dense "foods" required to feel full.

That said, I'm not sure one should assume that simply because someone is not eating meat that their diet is free/clear of processed foods.

I eat stuff like Tofurkey, field roast, some fake cheese, and so on, and I do it without apology, because most of what I eat isn't that kind of stuff. Sometime I just want to eat comforting crap, and I think there is nothing wrong with eating a modest amount of comforting crap if you're a healthy person who eats a generally healthy diet.

It just seems to me like people make a bigger deal of it when veg*ans do it because, I don't know, we're supposed to have a magically higher standard or something.
