I'm not vegan or vegetarian, but I like putting variety in my diet. Unfortunately, the lunch I'm planning to carry to work consists of mainly Ramen noodles. Ramen is okay, but it's very easy to get tired of. Plus, it's very high in carbohydrates, so it's not going to keep me going throughout the day. Does anyone have any ideas for delicious vegetarian recipes that would make a great lunch?
burritos! don't overstuff them, but with rice and beans as the base (cooked in quantity, then portioned), they're nutritious and filling. Then you can add some fresh veggies and salsa for an inexpensive healthy lunch.

That's a good idea. I think I'll try that. Should I use pintos, black beans, or lentils?
Shepard's salad. Tomatoes, cucumbers, onions, parsley, bell peppers, feta cheese(depending on what store you get it from, you can get it reasonably priced). Lemon and olive oil mixed in. If you make it in bulk, it could be low cost.
I make a vegetarian thing I call "mixture", lol. The base of it is brown rice, black beans, and a can of diced tomatoes with chilies in them. Add to that anything else you like--I often add sauteed spinach, sometimes fresh corn, sometimes fresh tomatoes, all depending upon the season. It's filling and cheap and healthful.
Last night I made a new mixture. Quinoa and chickpeas with tomatoes, jalapeno, basil, and rosemary from my garden, grilled cauliflower (courtesy of Trader Joe's frozen section) and chopped spinach from the freezer. Was kind of flat, even with the jalapenos, so I added some curry powder. That's lunch this week. Cheap and low-calorie.
One of the things I liked to make when I brought lunch to work was a little bowl with white beans or chickpeas, artichoke hearts, roasted or fresh peppers, diced tomatoes (canned were fine) on top of couscous or quinoa in a dressing of lemon juice and olive oil. Parsley if you have time. You can also cook the beans first in a little water or broth and italian seasoning and some onions. Or you can serve the same mix on lettuce.
Also, have you ever made a spanish tortilla? It keeps well in the fridge and is hearty for lunch with a salad. The basic recipe is below, and this is delicious on its own. But you can add spices or cheese or veggies if you like. The Spanish Tortilla Is the Best of All Omelets
