Hi,

I'd like to make stuffed peppers this weekend. I've never made them but I know that I want them to be vegetarian and only have a little bit of rice.

I was thinking of stuffing them with a mix of rice, lentils, black beans, and a bit of parmesan cheese.

Sound okay?

If you have a great recipe for veg-stuffed peppers, I'd love to hear it.

Honestly, that sounds kind of weird to me. I'd make it mostly about rice. Add some tomato pasta sauce, and anything you'd put into spaghetti sauce - olives, mushrooms, chopped up onions, green/red peppers.

Rice is cheap, I hope you can get some more. If you end up making it with legumes and it's great, please post the recipe. I'm all about rice and beans/legumes right now :-)

I wanted to keep it low-carb, hence just the bit of rice.

I'm on a starch-based diet, so I'm loving simple carbs right now.

What you could do, is just add more veggies and maybe just a little bit of the legumes. You could always use corn starch if it ended up too watery.

use grated cauliflower in place of rice. That will give you the bulk without the starch.

I use some rice mixed with black beans.
