I'm making my very own version of miso soup!

I bought some fresh - if there is such a thing! - miso paste. I'll cook up fresh spinach, onions, tofu and mushrooms in olive oil. And my own conglameration of spices: rice wine, wheat flour, a bit of salt.
With Basmati rice!

A lazy one tonight since my wife is sick. I heated up Amy's Indian paneer masala and had some break and garlic/olive oil on the side.

whole wheat pasta topped with sauteed spinach, red peppers and zucchini. Olive oil, garlic, pepper....yum!

I haven't posted here for awhile, but I just had an awesome meal! I got the recipe out of VT (again...). It was spaghetti squash, sauteed onion, garlic, and spinach, with sun-dried tomatoes, garbanzo beans and basil! It was so good. I have only had spaghetti squash once before and it wasn't that great. This recipe has me excited to try more of it!

On a side note, a friend is staying with us and she has decided to go dairy-free. I'm hoping it will help us lesson our use of dairy, too. Already I have switched to rice milk in my coffee (which froths up beautifully, by the way).

Here is my recipe for those who may miss "creamy" soups.

cream of broccoli soup

Sautee some chopped onions, celery and garlic in olive oil at the bottom of a large soup pot.

Add veggie broth to pot.

Add cubbed potato (1 or 2 small ones)

Add chopped broccoli florettes

Make sure veggies are close to covered with broth, put on lid.

Cook until softish.

Transfer to blender.

Back to pot, add some soy milk (i used unsweetened for cooking)

There ya go!

salt, pepper etc...

I made a kale, mushroom and potato soup. Lots of onions and garlic in it too, paprika and hot sauce to spice it up a bit, of course salt and pepper and veggie broth. Yum, I'll have it with whole wheat bread...

Just made a new tradition for our family--build your own bowl-o-beans! I cooked/seasoned some pinto beans and put them on the table with rice, cheese, tomatos, jalepenos, bell pepper, carrots, green onion, salsa...you get the idea. Then everyone can choose what they want in it. Also had homemade tortillas and margaritas! And then an awesome cake...see the vegan cake recipe thread I'm about to resurrect!

We are in the 20's with "freezing drizzle" here in IN. Oh Joy!

I am making a garlic/rosemary white bean soup (winging it) and some cheesey quick bread.
