Quinoa with diced red and green peppers...ginger marinated tofu, and a beer. All (except the beer) made by my omni wife who now only eats meat about once per week.

Pizza! I had to clean out the last of the eggplant, summer squash, tomatoes, peppers and basil from the garden yesterday before they were killed by frost this morning. I'll sautee the veggies in olive oil before I put them on the pizza.

Had the yummiest dinner last night! Had friends over, so I made a mole sauce (my first time), served over corn crepes filled with a mixture of goat cheese, corn, chiles, pine nuts, and zuchinni. Heaven! Also had a baby greens salad with a cilantro vinigrette, topped with avocado slices and pomagranite seeds. Lots of red wine and margaritas, chips and homemade salsa. Baked, carmelized pears and ice cream for dessert (and then more margaritas and chips...).

Middle Eastern Vegetable Stew, with butternut squash, carrots, potatoes, tomatoes, garbanzos and lots of cumin and tumeric and other fragrant spices served over couscous.

Today I had a boca burger on wheat bread. Toppings were spinach, pickles, swiss cheese, spicey brown mustard and ketchup. Bannana for desert.

It's hot today, supposed to reach 90ish (well, it's very hot for us here in Oregon). So, for dinner it's steamed vegetables (carrots, artichoke hearts - with raisins) on lettuce, with Hemp Nuts spinkled on top, and olive oil w/lemon dressing. Gotta love the olive oil...best thing in the world!!!

don't sound weird, as they frequently do to the society-enmasse!

I'm looking for that stew recipe, too! Tonight it is a simple concoction of brown rice, left over tomato soup, and whatever veggies I can throw in. Taking it easy before the MIL comes. She hates to cook, but loves to eat good, interesting things and is always game for new things! So she gets to be cooked for, and I get to cook for an appreciative audience!

Think lasagna -- swap the noodles for sliced eggplant -- and layered with garlic-infused marinara sauce, parmesan cheese, mozzerella cheese, zuchinni and fresh basil.
Soooooo gooooooodddd.

Veggie burritos - using warm flour tortillas, Amy's vegetarian refried beans, black beans, onions, shredded romaine, tomotoes, and shredded lowfat skim mozzarella (sorry vegans - its hard to find a good sub here in Italy).
