My heirloom tomatoes are little tiny yellow ones so I will blister them and serve with pappardelle noodles, spinach and lots of basil, with a side of brussell sprouts.

I am making tomorrow's St. Patrick's Day dinner. It's a thick cabbage ad potato soup with white beans.
It's actually a French cabbage and white bean soup I found in an old vegetarian slow-cooker recipe. It called for one potato. I add more potatoes and some smoked salt. I made it last year and my omniverous friend loved it, too.
We aren't eating vegan, but having fire roasted red bell peppers in a corn tortilla. That would be vegetarian with a touch of cream cheese or jack cheese in there. For vegans just do the peppers and tortillas.
We carnivores have a couple of slices of grilled steak in ours, but they are excellent with just the peppers and tortillas. Perhaps served with sides of refried beans and Spanish rice.
Fire roasted red bell peppers are one of the truly great flavors.
I'm going to try making spaghetti carbonara, using those ham-like Tofurky slices in place of pancetta
