Fresh marinara with veggies, Gardein Imitation Meatballs over a artisinal (sp?) pasta... they look like little ears....

Not sure what I'll have tonight, but last night I had a delicious dinner...tofu "meatballs" with naan on the side. Oven roasted red peppers and sweet onion on skewers. Yum!

Last night cleaned out the fridge:

Cooked the rest of the naan from earlier
Mixed a brown rice mix with quinoa: topped with radicchio, red and green onions, added some roasted orange and yellow bell pepper, kalmata olives, zucchini and some freshly made pesto.

A portobello mushroom cap on a sesame seed bun with mashed avocado underneath the mushroom, sauteed onions, sliced tomato, and arugula on top, and mayonnaise mixed with hot sauce spread on the bun.
