What's For Dinner Tonight (Veggie Version)? (Kashi, food, tomatoes, vegetable)

made a veggie curry last night - potato, mushroom, carrot onion with one sweet potato and one Japanese eggplant (cause I had them left over and on hand) with fresh ginger and Thai Basil-

used Massaman and Penang spices--

could have been vegan (I use olive oil but couldn't resist sautéing the onions in BUTTER)

it rocked, not too spicy either (last night was potluck, with a pregnant woman).

we are finishing it tonight!

Felafal, tomato, cucumber and green onion stuffed pita sandwiches with tahini dressing. Tabouleh salad.

Teriyaki bowl: buckwheat noodles, red bell, pineapple, green onion, baked tofu, edamame... probably some red pepper flakes for me, and sliced habaneros for DH

Tonight potato casserole and a tomato,onion,baby spinach salad. For dessert 1/2 a pink grapefruit.

Freshened up the marinara and pasta and dumped a huge amount of cheese on top for kidlet, broccoli and a big salad.

Sauteed mixed greens, with onion and garlic. A baked sweet potato with a dollop of Greek yogurt.
Middle eastern bread salad with sumac dressing.

Soup and a sandwich. I made a nice pot of Tom Yum, and will do a veggie burger on toasted Kaiser rolls with avocado, onions, lettuce and pickled jalapenos.

Last minute change: Didn't feel like the two items went together so DH picking up Lemongrass Tofu Bahn Mi and summer rolls on the way home.

Tonight vegetable daal/soup with potatoes,carrots and peas. Served with cilantro chapatis ,homemade plain yogurt,lassi and onion rings.Pink grapefruit for dessert.

Spicy breakfast quiche. Chilies, green onions, soy chorizo, cheese, and hash browns on the bottom, will top with tomato and avocado, and a side of pineapple.
