Last night I served Ratatouille over couscous. I actually used the Disney recipe which is on line. It was so good. And better today. Good with a baguette and a glass of wine.

Last night was tacos made with Morningstar black beans patties seared and then sliced up with lots of veggies.

Tonight it will be a Japanese Buddah Bowl: sprouted rice mix, spinach, wakame, kombu, nori, fish cake, sesame seeds, green onions, edamame and a wasabi dressing. Maybe some imitation crab and cocktail sauce on the side?

PS: DH is running late so I pan fried some tofu, and found some pickled onions and ogo to add

I am making green lentil/moong daal with cilantro chapatis,homemade plain yogurt,a platter of tomato,purple turnip,onion,cucumber,celery,white radish slices and lime pickle. To drink lassi.
For dessert grapefruit and orange salad flavored with honey,lime juice and fresh ground cardamon.

I'm thinking a grilled vegetable pizza. I can practice making baked goods, and i have everything except for some good mozzarella.

I was in the mood for something naughty and indulgent, so I concocted chick'n and waffles, using a whole grain waffle and those Gardein 7-grain chick'n tenders. I'm normally not into meat analogs, but my goodness it was divine!

Black bean loaf with sriracha catsup, broccoli and cauliflower.

My 6 year old caveman surprised the hell out me by asking for seconds; he didn't seem to realize I'd care that the meatloaf had no meat on it, lol.
