Veggie Salisbury "steak", whole wheat noodles, steamed veggies. I used Gardein crumbles for the first time (typically I make this with lentils), and it was incredible.

Last night was a Mediterranean Buddah Bowl: quinoa, white beans, spinach, red pepper, artichoke hearts, red onion, yellow tomatoes, kalamata olives, pepperoncinis with a tahini sauce.

Tonight Japanese style: shiitake mushrooms, bamboo shoots, green onions, daikon, grilled eggplant over kamut with gardein chicken and teriyaki sauce.

Tonight will saute veggies (eggplant, spinach, red pepper, onions, mushrooms) and do a spicy sate sauce over grains.

I have tons of chilies coming in so I will make a roasted chili paste, and cook up the rest of the naan and serve them together.

It was decent; it came out a little too sweet tasting, so I need to tweak the sauce a little bit. Instead of eggs and cream, I thickened unsweetened soy milk with cornstarch, but next attempt I'm going to use unsweetened almond milk.

It was pretty tasty.

Ended up using cellophane noodles instead, because I found them in the cabinet!

Lentil tacos with a side of tostones (fried plantains). For once I didn't completely overlook the lentils and turn them to mush haha
