I'm diggin' the black bean and pineapple idea. I make a black bean/corn/mango salsa in the summer. I like the hot/savory/sweet concept. I'll keep that one in mind as we head into spring.

Tonight I made a potato/leek gratin (sorry vegans it had Gruyere ). I used cauliflower for more than 1/2 of the potatoes. I'm using that trick more and more often lately. Less starch, but has a nice creamy consistency and I like the flavor.

Tonight was "breakfast for dinner" at our house.

I started craving omelettes while on my run this morning. My SO made crescent rolls from a tube (he's not the cook in the family ) while I prepped ingredients.

He had spinach, onion, mushrooms, and cheddar cheese. I had egg whites-only with spinach, green pepper, and onion topped with salsa.

I'm not much of an egg person, so this was a special treat for us.

Can I cheat and list what we had for breakfast? We made these this morning and they were great!

Just be warned, they are quite sweet so you may want to cut down on the brown sugar. Also, if you are using vanilla flavored soymilk, you can skip adding the vanilla extract.

We had a quinoa casserole with spinach, cheese & eggs. Modified the recipe from here (http://www.nytimes.com/2008/11/05/he...ipehealth.html) a bit but it was one of the yummiest brunches ever!

We had a great dinner of tofu marinated in black bean sauce (yum!), stir fried broccoli, peppers, squash, onions, and green beans, and brown rice.

Anyone who says vegan (or vegetarian food) is just salad, hasn't had my wife's cooking!

Cheeseburger sub... Boca Burger topped with just melted cheese slice and cut in half. Halves spread apart on a good steak roll, lightly toasted, some mayo. A whole tomato sliced thickly and salted and peppered, and most of the slices crammed on the sandwich. Cut in half for easier handling and enjoyment Yum!

I had 2 boiled potatoes quartered, with chopped tomato, chopped red onion, tossed with olive oil minced garlic and fresh rosemary and cracked pepper...... YUM yum.....

I had made pa jeon (Korean pancakes with butternut squash) for lunch. Delicious!!
For dinner the family had the turkey (shudders), I had some stove top stuffing, leftover pa jeon and a casserole I had made with the unused butternut squash - it was squash, nuts, cinnamon, and brown sugar.

Goodness, I'll accept any excuse to eat pancakes! Haven't had them for a while...I'll have to look that recipe up!

Tonight I'll make a salad. Mixed greens, grilled 'shrooms & tomatoes, walnuts (love them!), left-over steamed asparagus. Oil & vinegar dressing. I have to go to the store to get fresh bread for garlic bread!
