I second the big portabello mushrooms. I use them grilled a lot instead of a burger or cubesteak, and I don't see why you couldn't just bread them and fry them for a "faux veal or chicken parmesan".
There's also tofu. I wouldn't use it, but I hear you can treat it just like any meat and it takes on the flavor of whatever you put with it. I've seen something about making sure you get all the water out of tofu before you use it. You'll need to research this.

It depends on what your purpose is. Do you want to avoid eating meat because of the costs, or do you want ways to get a 'complete' protein balance? There really isn't much that will replace the flavor of meat, IMO the best way to cut back is to increase the other ingredients while using just emough meat for flavor. If the protein content is your concern, do some research on protein complementarity. Corn, rice, and beans in the same meal is one of the commonest combinations.
If you ever get one of those ginormous zucchini that gardeners like to give away they actually are really nice sliced in a thick slice -1/4-1/2" and grilled or pan fried cutlet-style.
Portobello mushrooms are great! Done well, you can bearly taste the difference between them and a meat burger. If your intent is to lessen the amount of meat you eat, and ultimately replace it, this link may be helpful:
