Another town to consider is Middlebury. Great downtown. Lots of restaurants, shops at shows at the college or Town Hall Theater. It's got a similar "vibe" as Montpelier except Middlebury has influence from the College and Montpelier from being the state capital.
Do you need high speed internet for your business? Keep in mind that it is not available everwhere. If you are serious about living here when you start looking at property make sure it is available to you!

My friend's son, wife and kids are in Randolph; there are many families with children, a fair mix of professionals and blue collar.

Reading the OP I get the impression that the Burlington area would be the best fit. Waterbury, Montpelier, etc are all nice towns, but in all honesty , the sidewalks roll up at night. There are resturaunts that are open, but the options in those areas are very limited. It sounds like any of the towns within 10-15 minutes of Burlington would be perfect. Great shopping, night life, etc.
