I love cheddar. I like Grafton village (the regular one, not "extra" aged mostly due to cost, not that I don't like the flavor!), neighborly sharp cheddar, Shelbourne farms.
I'm a "bad" Vermonter in the sense that I don't like sharp cheddar. I prefer the softer cheeses, but I do really like Shelburne Farms six month cheddar.
I'll take the low moisture cheddar that Grafton makes given my druthers. The odds and ends are reasonably priced and taste just the same as their regular stock to me. I enjoy Cabot extra sharp too. Good thing, because that's the only brand available here in North Troy. It's a much wetter cheese but it's still got great flavor. Don't know why exactly, but Shelburne's offerings just don't do it for me. Maybe I ran into a bad batch somewhere along the way. Lazy Lady Farm in Westfield makes some outstanding goat cheeses. Try their La Roche, which can be found at most food co-ops except in the dead of winter.
My mother used to love the sharp cheddars. Oddly, the rennet or whatever it is that made them sharp used to hurt my gums. Since the only other cheese around the house back then was cottage cheese, I got to liking the milder ones.
