What are the laws regarding carrying a pocket knife or switchblade in your pocket, bag or purse? As a woman, If I'm travelling on the highway or interstate alone at night, I like to have some sort of protection. I just don't want to get in trouble for it.

If you are serious about protection, then take a hand gun class, get licensed to carry...that is protection. A knife is for cleaning your fingernails or cutting apples, not protecting yourself.

Here you go. The first link, while mainly about firearms, also has links to code (law) regarding knives. The second is specifically about certain types of knives, including switchblades. Possession of a switchblade is a Class 4 misdemeanor. The third link tells you that you can be fined no more than $250 for a Class 4 misdemeanor.

A knife is a better weapon for self-protection than nothing at all; but in order to use it you have to get up close, which exposes you to injury, and have the strength to penetrate with the blade, which is not as easy as it looks, particularly if your assailant is wearing heavy clothing.

Much, much better off getting a revolver and training in its use, even if its only a .22 (you can always put it in a sock and swing it )

If you have problems with a firearm, get pepperspray.

Get a taser and make sure it is charged before you leave the house.

You may carry what you want....as far as I know, there are no laws against any of the items you mentioned. Pepper spray is fine....Mace is not.
