Navajo tacos would sell well. Fry bread and chunks of lamb (or beef) with chili made into a taco. Not something to eat in a car, so you'd need a sit down restaurant or else sell at the farmer's market. A good Navajo taco is not a cheap thing to make and it involves labor.

Locally, fry bread is nothing like a funnel cake. It is biscuit dough rolled out thin with a rolling pin and fried crisp in hot oil.

Sopapillas are similar, much smaller, puffier, and topped with honey. I can see that working in a farmer's market. There is some labor involved with those, too.

Probably, there is some sort of expensive restaurant equipment that will roll out dough for you to help with the labor issue.

I have seen boiled peanuts at Trader Joe's and they were not exactly jumping off the shelves. In our area where the craft micro-brew is king, people like the classic roasted in oil, honey roasted, or dry roasted. I doubt that boiled would do well anywhere in the state. While we have immigrants from many states/other countries, those coming here from the south are rare.

Trader Joe's is awesome, of course they would carry boiled peanuts. LOL Yeah it sounds like it might not work out here with the peanut stand. Fry bread might be a different story from the sounds of it. I was just looking for ideas on something that really hasn't been done yet. Thanks for all of the comments!!!

Boiled peanuts are really cheap to make and it was gonna be really easy to start. All you need is the peanuts, seasoning and something to boil them in. I guess it's an acquired taste. They can be a excellent source of protein and antioxidants for vegans and just make a healthy snack.

The thing about the boiled peanuts in a can is that they taste more awful than fresh boiled peanuts. It's like eating warm popcorn v. cold popcorn. One's better than the other. So there's that.

I didn't even know you could get boiled peanuts in a can, that does sound awful. If that is all somebody has tried it's no wonder they don't like them.
