Husband works remote, and we're looking for a 1 bedroom under 2000 in a safe relatively quiet neighborhood with enough conveniences close by, like grocery stores, movie theaters etc. Also a park (or similar type of area) for walking or casual bike riding would be nice.
We'd like to be able to take a train or other public transportation into Manhattan on weekends.
We know nothing about living on the east coast, but looking for a different experience and will also be visiting other historic areas and beauty spots like Adirondack Park from wherever we live.

I am buying a condo in Harbors in Haverstraw harborsathaverstraw.com, which is basically its own city with breath taking views. I am very excited about it, and if I won't rent it, I will eagerly move into it.
I would look into Fleetwood in Mt. Vernon, NY. It has everything you asked for, is in a lovely neighborhood, and it's right next to Bronxville, another beautiful town. 25 minutes to Grand Central.
Another vote for White Plains. Haven't looked at the rental market there for a while, but should be able to get good 1 bed room for $2000. I would go with White Plains over Fleetwood/Mt. Vernon, Yonkers, or New Roc any time. Fleetwood area is decent, but would stay away from the rest of Mt. Vernon, New Roc or Yonkers. You can also look into Tuckahoe.

Harbors is an absolutely beautiful place to live. We've been there for about 9 years and love it! The commute to the city is a beast though.
How close to NYC do you need to be? If you only want access to the train for weekend trips, you can live further north/east and get more for your money
