my son picked NC as HIS state to do a project. his teacher sent home a recipe for donuts, but we don't even have a deep fryer and I don't like donuts too much anyway.
so - what else is something REALLY typically, maybe even invented in NC ?

Let him bake some sweet potatoes and call it a day. Throw in some ham for good measure.
NC is the highest sweet potato producer in the US.
One of my earliest memories is cooking donuts with my granny on her big woodstove in a skillet of fat. You don't need a deep fat dryer, just a big iron skillet but be careful if you do as that's a lot of hot grease
Queen, - All the BBQ that I run into around here is pork - pulled pork, pork ribs. There's absolutley no beef (beef ribs) BBQ in most of the places, so if BBQ is part of the food project, I would say keep it pork.
There's also a difference between coastal and mountain regions. I'm not educated enough in the subject to get specific, but I know traditional BBQ sauces will differ.
How about Road Kill Stew? I always see quite a bit of the ingredients around town.
