What’s up with Asheville (Madison, Mars Hill: to live, restaurants, costs)

You will get better answers posting in the Western North Carolina sub-forum, rather than the general NC forum. But, in general, if you have the money, you can buy land and build a house. For other facts on ethnicity, check the main City-Data profiles. The schools are decent, but not outstanding.
Fletcher is in Henderson County and has fairly good schools, ranked #18 in NC (B+) out of 115 school districts....which is close to top 20%. Arden, Swannanoa, Black Mountain, Montreat and Weavertville some of which were mentioned earlier fall under Buncombe County schools and is ranked #15 in NC. Asheville City Schools are ranked #6 in NC and includes less dense areas like Beaverdam up on the northeast side, if the OP wants buy a lot and build. The OP should be aware that building costs are high in the Asheville area. Part of the reason is steep terrain. They will probably find it is a lot less expensive to buy an existing house. Here's a recent thread that quotes $350/square foot to build. Costs range up to $400-500/square foot. OTOH, one can buy a nice house on acreage for $450K to $600K in the towns mentioned.

Yes I would try and find a flat lot. At least for the home portion
Personally, I would go out beyond Weaverville if you cannot afford it into Madison County. My girlfriend has a Marshall address, but is in Madison County (lower taxes) but is basically equidistant between Marshall and the big box shopping in Weaverville.
I thought I'd hate the location, but it's lower taxes, ten minutes to Publix/Ingles/Walmart, about fifteen to North Asheville/Woodfin, and twenty to twenty-five minutes from downtown Asheville or the shopping at Tunnel Road. There is a large amount of acreage available and property costs are much more reasonable than Buncombe County. I'd avoid the more rural areas around Madison County - just slow to get in and out of, and inaccessible.
Marshall really doesn't have much except an Ingles, couple small restaurants, and a few shops in the downtown area by the river. Mars Hill, a bit farther north of Asheville and directly off the interstate, has a college and a bit more culture.
That's for good, buildable land. Note that it is within an HOA. Steeper lots, or ones off the road could be less. It's your option how much land preparation you are willing to do.

10-15 minutes to grocery Wally World and restaurants, but a little out there in the country is exactly what I’m looking for
