ranger - I had back surgery in Madison when I was a teenager, I still remember how neat the capital looked, but we never got close. I'll add that to my list!

Amino - I was never that way with curds, but I always tried to buy same day, because they squeeked a lot. I'll have a extremely fresh cheese curd when I do a factory tour! It's been a few years since in WI but the place I bought my curds had weekly deliveries.

State Fair in WI next summer is Aug 6 - Aug 16 which is a week or two later than it has been in recent years. Details at wistatefair.com or Wisconsin State Fair | Travel Wisconsin on the state tourism site.

We used to live two blocks from the North entrance to the fair and enjoyed an amazing amount of bad-for-us food during the fair. What a great time.

I do suggest you try the curds fried. Fresh is the best, but fried cheese curds are a whole new treat if you have never had them.

i dont mind fried cheese curds/sticks, they make a nice appetizer. But i have to admit the best of that 'type' i've had so far actually was down in SC. A local seafood place made their fried cheese sticks with fresh mozzarella so one bite and you had the creamiest cheese you could imagine (so often they seem just like string cheese with breading).

Fried sticks are not curds of course, but dang those (and their homemade hush puppies) could make a tasty meal on their own lol

If you get non-squeeky curds just micro wave them the 5-10 seconds to warm them up.

I found a good cheese curd at the Liqour Barn in Lexington, Kentucky...we bought about 3 different types and a big loaf of bread and ate them in the parking lot!!! Frankenmuth Michigan has a whole refrigerator case full... we have eaten our share their and not to mention Pinconning for cheese up there.... never thought to deep fry them....sounds great!!! Now I want some...

Just ordered the 20 bags, really excited to get them. My co-workers are questioning me about them on a daily basis. They're like blood hounds, man!

I live in Texas. In the last couple of years, I've started seeing cheese curds in the grocery stores here.
