My husband, son and I are thinking about moving to the Appleton area. Right now, we live in metro Atlanta...but are from St. Louis.

Hi! I think you will find Appleton to be a lovely place. There is always a demand for good teachers!
Have you visited the Appleton area before? If not, I'd advise that you take a trip and check it out. I personally really like Appleton very much. There are good schools, lots of things to see and do, the people in the area tend to be friendly.
The only con I can think to mention is that the winters get very long and cold, but seeing as how you're from St. Louis, you aren't completely unfamiliar with winter!
