Keep a copy of the payroll statements that include accrued personal time off (not just the last one - although that one is important, you want to be able to demonstrate the pattern) and a copy of the employee handbook describing their personal time off policy. While the employer may change their policy going forward they will have great difficulty taking back time already earned.
