I want my last week too be next week but we also only work mon-wed as we are on paid holiday Thursday and Friday..

Would I get paid for that?

Its a very large corporate place so I'm not sure if that matters.

Also , my other option would be to work out that week of new years, but I just don't see them allowing me to as we get goals and next week is the last week of this period.

That's up to the company--we can't tell you what they are going to do. They may have you turn in your stuff when you turn in your notice, or any other number of things.

Yes, most likely the two week notice will result in an immediate escort out of the office with pay only up to that point.

What about give a two week notice today, last day of employment in the middle of the week between Christmas and New Year's?

A large company? This shouldn't be much of an issue, as long as you make your last day be AFTER the holidays. Put in your 2 weeks, say, 2 weeks prior to Jan 5th, and you should be paid for the holidays, unless your direct superior has some sort of vendetta towards you and cans you right away.
