I've only been to Morocco, so I can't comment too much on Iran, except that it is over 2.3 times the size of Morocco, so I'd imagine solely based on size, it would offer a bit more diversity in terms of geography. I've heard it's an incredibly beautiful country and hope to visit some day.
As far as Morocco goes, the diversity blew me away. The atlas mountains are quite magnificent, there's even a town there built with more Central European Architecture (Ifrane), where if you didn't know any better, you might think you're in Germany. That, and they have some of the most accessible desert scenery in Africa, some of the world's best kite surfing locations, and everything in between. A lot of people think of Morocco as a place to go haggle for some inexpensive carpets and drink mint tea, but it's really an outstanding place for outdoorsey people.
They are both quite scenic, but I think Iran has the edge as it has jungles in the north.
Nah. Most of it's deciduous forest that strongly resemble the American Appalachian south east.
