Unit is not in operation at the time of inspection. All non-critical violations must be corrected before start operating. All equipment must be cleaned and sanitized prior using.
The follow-up inspection will occur on May 15, 2015.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Reach-in refrigerator/freezer was observed in a condition that prevents necessary maintenance. Unit is not supporting cold holding temperature of 41 F or less.
    Correction: Repair/adjust refrigerator to 40 F or less to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Plumbing System Maintained in Good Repair
    Observation: Water hose connected to the wall of the mobile unit is leaking through the wall on the floor. Repair water connection.
    Correction: Repair and maintain all plumbing components ans fixtures.
  • Pests - Controlling Pests*
    Observation: Harborage conditions exist. Ants.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

All food being cooked in the restaurant and brought over to mobile unit. Dirty utensils and equipment is taken back to the restaurant. Unit in operation on weekends only.
  • Physical Facilities in Good Repair
    Observation: A few floor tiles are damaged and need to be replaced.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
