Anybody have a full understanding about how this works? I understand that the cooking process boils away any alcoholic content in wine that is used in cooking. However, the reason for using the wine is because it adds a pleasurable flavor and aroma, which to an alcoholic, could trigger a desire to drink wine. I have no particular need to know, but just curious.

I have a friend who is alcoholic and in the medical profession. He will not eat anything cooked w/alcohol. No way he wants to jeopardize his sobriety.

You can't cook 100% of the alcohol out.

Agreed. Best to avoid it completely rather than take the risk.

There used to be a belief that the alcohol cooked off but no so.

You can use other ingredients that will also produce wonderful tasty great smelling meals without the use of alcohol. Any person who has had an alcohol problem would not take a chance. I have a dear friend that would not even allow herself to a wonderful trip to Sonoma CA because of the wineries there. She feared it would be a trigger. Nothing is worth losing your sobriety!!

You can purchase non alcoholic wine.

I doubt that the little bit left of alcohol left after cooking with it, would make you want to go out and buy a bottle of it.

Alcoholics are very sensitive to "triggers". The problem is we don't know where that line is for each individual. It could very easily be just that very small amount or even the smell or Just the knowing it is in the food. It just is not worth finding out for a person who has struggled to get their sobriety!
